  • Spritz Cookie Recipe

    SPRITZ (traditional molded Scandinavian cookies) — easy & pretty.

    1 1/4 cup (2 1/2 sticks) butter (room temperature)
    1 cup sugar
    2 egg yolks
    2 tsp. almond or vanilla extract
    3 cups flour
    1 2/ tsp. salt
    Cookie decorations/food coloring

    Cream butter and add sugar gradually. Beat in egg yolks and flavoring. Blend in flour and salt. You may divide recipe and add food coloring as desired. Put the design into your cookie press and then put a small amount of dough into the cylinder and check the release of the cookie — if the cookie shape doesn’t release well, your dough may be too stiff — add a small amount of milk or cream into a portion of your dough, mix well and test again.

    Hold your cookie press over an ungreased cookie sheet and press out your designs. Decorate as desired before baking.

    Bake at 375 degrees F. for about 7-9 minutes until very light brown. Cool slightly on the cookie sheet and then remove to wax paper or cookie rack to cool. Freezes well.

    Chocolate Almond Cake Recipe

    Here's another great recipe to use in that Almond Cake pan available at Lena and Ole's Gifts and described in another entry under the Specialty Kitchen Utensils.

    • Beat together well 1/14 cup sugar, 1 large egg, 1/2 cup milk, 1 tsp. almond extract, & 1/2 tsp. vanilla.
    • Melt 2 squares (2 oz.) unsweetened chocolate with 1 stick (1/2 cup) butter in microwave or over low heat on range and add to mixture.
    • Add 1 1/4 cup flour and 1/2 tsp. baking powder and mix well.

    Pour into almond cake pan which has been greased well with shortening or sprayed with flour/shortening spray (Pam or similar product works very well)   Bake at 350 degrees F. for 50 minutes to 1 hour or until a tester or toothpick comes clean.  Cool in pan for 3 minutes.  Tap gently on edge of pan and turn out onto cooling rack.  Sprinkle with powdered sugar while still warm.  Slice and enjoy.
